1 lb ground beef

4 medium-sized potatoes, thinly sliced

1 medium onion, diced

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, corn, and carrots)

1 tsp garlic powder

1 tsp salt

½ tsp black pepper

1 tsp dried thyme (optional)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Beef: In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat.

      Sauté the Onion: Add the diced onion to the skillet and sauté for 2-3 minutes until the onion is softened. Stir in the garlic powder, salt, black pepper, and thyme (if using). Mix well.

        Prepare the Casserole Dish: In a greased 9x13 inch casserole dish, layer half of the sliced potatoes at the bottom.

          Layer the Filling: Spread half of the cooked beef mixture evenly over the potatoes. Then, layer half of the frozen mixed vegetables over the beef. Next, pour half of the cream of mushroom soup over everything. Repeat the layers with the remaining potatoes, beef, vegetables, and the rest of the soup.

            Add the Cheese: After layering, generously sprinkle the shredded cheddar cheese atop the final layer.

              Bake the Casserole: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                Garnish and Serve: Once baked, take the casserole out of the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
