Ingredients

1 lb ground beef

4 medium potatoes, diced

1 medium onion, chopped

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon Worcestershire sauce

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Cook the Ground Beef: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Then add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

Mix in Vegetables: Once the beef is nearly cooked, stir in the frozen mixed vegetables, garlic powder, paprika, Worcestershire sauce, salt, and pepper. Cook for another 5 minutes until everything is heated through.

Prepare the Casserole: In a large mixing bowl, combine the cooked beef mixture with the cream of mushroom soup and mix until well incorporated. Then, gently fold in the diced potatoes.

Layer and Bake: Pour the mixture into a greased 9x13 inch casserole dish. Spread it out evenly. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Add Cheese: After 30 minutes, remove the foil, sprinkle the shredded cheddar cheese on top, and return to the oven. Bake uncovered for an additional 15 minutes, or until the cheese is bubbly and golden.

Serve: Let the casserole cool for a few minutes before serving. Enjoy your hearty and comforting Hobo Casserole!
