Hobo Casserole Ground Beef Recipe

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) mixed vegetables, drained (or 2 cups fresh/frozen mixed vegetables)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 tsp Worcestershire sauce

1 tsp dried thyme

Salt and pepper to taste

4 medium potatoes, thinly sliced

1 cup shredded cheddar cheese

Optional: Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef. Drain excess grease, then add the diced onion and minced garlic. Sauté until the onion is translucent (about 3-5 minutes).

      Combine Ingredients: Stir in the mixed vegetables, cream of mushroom soup, beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Mix until all ingredients are evenly combined.

        Layer the Dish: In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom. Pour half of the beef and vegetable mixture over the potatoes. Repeat with the remaining potatoes and beef mixture.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

            Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve warm and enjoy your Hobo Casserole Delight!
