3 cups cooked jasmine rice (preferably chilled)

2 tablespoons vegetable oil (divided)

2 large eggs

1 cup mixed vegetables (peas, carrots, and corn)

1 small onion, finely chopped

2-3 green onions, sliced (white and green parts separated)

3 cloves garlic, minced

3 tablespoons soy sauce (adjust to taste)

1 tablespoon sesame oil

Freshly ground black pepper, to taste

Pinch of salt

Optional: Protein of your choice (chicken, shrimp, or tofu), pre-cooked and cubed

Prep Your Ingredients: Ensure that the cooked jasmine rice is cold to prevent it from becoming mushy during cooking. If you haven't cooked the rice ahead of time, consider using day-old rice or cooling freshly cooked rice rapidly in the fridge.

    Heat the Pan: In a large wok or frying pan, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the chopped onion and sauté for about 2 minutes until it becomes translucent.

      Scramble the Eggs: Push the onions to one side of the pan, then crack the eggs into the other side. Scramble them until they are just set, then mix them in with the onions.

        Add Veggies: Incorporate the mixed vegetables and the minced garlic into the pan. Stir-fry everything together for about 2-3 minutes until the vegetables are tender and the garlic is fragrant.

          Toss in the Rice: Increase the heat to high and add the chilled jasmine rice to the pan. Using a spatula, break up any clumps and mix everything thoroughly.

            Season It Up: Drizzle the soy sauce and sesame oil over the rice, and add the white parts of the green onions. Stir well to ensure that all the rice is evenly coated and heated through. Taste and adjust seasoning with black pepper and salt as needed.
