4 halibut fillets (6 oz each)

1 cup fresh parsley, finely chopped

1/2 cup fresh basil, finely chopped

1/4 cup fresh dill, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

Zest of 1 lemon

1/4 cup olive oil

Salt and pepper to taste

Lemon wedges for serving

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Herb Mixture: In a mixing bowl, combine the finely chopped parsley, basil, dill, minced garlic, breadcrumbs, and grated Parmesan cheese. Add the lemon zest and drizzle in the olive oil. Mix well until all ingredients are thoroughly combined.

      Season the Halibut: Pat the halibut fillets dry with paper towels. Season both sides with salt and pepper to taste.

        Coat the Halibut: Place the halibut fillets on the prepared baking sheet. Generously press the herb mixture onto the top of each fillet, creating a thick crust.

          Bake the Fish: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The herb crust should be golden and crispy.

            Serve: Remove from the oven and let rest for a couple of minutes. Serve the herb crusted halibut with fresh lemon wedges on the side for an added zest.
