Ingredients

8 chicken drumsticks

1/2 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh parsley, chopped

1 tablespoon lemon zest

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika (smoked or sweet, as preferred)

1 tablespoon olive oil

Lemon wedges and fresh herbs for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

Make the Herb Butter: In a medium bowl, combine the softened butter with minced garlic, rosemary, thyme, parsley, lemon zest, salt, black pepper, and paprika. Mix until all ingredients are well incorporated and you have a vibrant herb butter mixture.

Prepare the Drumsticks: Pat the chicken drumsticks dry with paper towels to remove any excess moisture. This helps achieve a crispy skin.

Coat the Drumsticks: Place the drumsticks in a large mixing bowl. Drizzle the olive oil over them and toss to coat evenly. Then, take the herb butter mixture and generously coat each drumstick with it, ensuring they are well covered.

Arrange on Baking Sheet: Lay the coated drumsticks on the prepared baking sheet, ensuring they are spaced apart for even cooking.

Roast in Oven: Roast the chicken in the preheated oven for about 35-40 minutes or until the drumsticks are golden brown, crispy, and the internal temperature reaches 165°F (75°C). Halfway through, turn the drumsticks to ensure they cook evenly.

Rest and Serve: Once cooked, remove the drumsticks from the oven and let them rest for about 5 minutes. This allows the juices to redistribute throughout the chicken.

Garnish and Enjoy: Serve the drumsticks warm, garnished with lemon wedges and fresh herbs if desired. They pair wonderfully with roasted vegetables or a fresh salad!
