1 cup green or brown lentils, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 red bell pepper, diced

1 cup diced tomatoes (canned or fresh)

4 cups vegetable broth

2 cups water

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Lemon wedges for serving (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they become translucent.

    Stir in the minced garlic, diced carrots, celery, and red bell pepper. Cook, stirring occasionally, for another 5 minutes until the vegetables start to soften.

      Add the rinsed lentils to the pot, followed by the diced tomatoes, vegetable broth, and water. Stir to combine.

        Season the mixture with cumin, smoked paprika, thyme, salt, and pepper. Bring to a boil.

          Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 30-35 minutes until the lentils are tender.

            Taste and adjust the seasoning if necessary. If the soup is too thick, you can add more water or broth to reach your desired consistency.

              Serve hot, garnished with fresh parsley and lemon wedges on the side for added brightness.
