1/2 cup grated parmesan cheese

1/2 teaspoon baking powder

1/4 teaspoon onion powder

1 cup fresh spinach, chopped

1/2 cup shredded mozzarella cheese

2 large eggs

2 tablespoons melted coconut oil (or olive oil)

1/2 teaspoon black pepper

Optional: 1/4 cup chopped walnuts or sunflower seeds for added crunch

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, grated parmesan cheese, baking powder, garlic powder, onion powder, salt, and black pepper. Mix well to ensure that all dry ingredients are evenly distributed.

      Prepare Spinach: In a separate bowl, mix the chopped fresh spinach and shredded mozzarella cheese. You can sauté the spinach lightly in a pan if you prefer a softer texture, but it’s not necessary.

        Combine Wet Ingredients: In another bowl, whisk the eggs and melted coconut oil until frothy. This will help incorporate air for a fluffy cookie texture.
