1 cup canned pumpkin puree

1/4 cup honey or pure maple syrup

1/4 cup unsweetened applesauce

1/2 cup almond milk (or any non-dairy milk)

1 teaspoon vanilla extract

1 cup whole wheat flour

1/2 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup dark chocolate chips or raisins (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix wet ingredients: In a mixing bowl, combine the pumpkin puree, honey or maple syrup, applesauce, almond milk, and vanilla extract. Whisk until the mixture is smooth and well combined.

      Combine dry ingredients: In a separate bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

        Combine wet and dry mixtures: Gradually add the dry mixture into the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are fine!

          Add mix-ins: If desired, fold in chopped walnuts or pecans, and dark chocolate chips or raisins for added flavor and texture.

            Fill muffin tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

              Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the middle of a muffin comes out clean.

                Cool and enjoy: Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
