1 cup grated zucchini (about 1 medium zucchini)

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 cup rolled oats

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp sea salt

1/2 cup honey or maple syrup

2 large eggs

1/4 cup unsweetened applesauce

1/4 cup unsweetened almond milk (or milk of choice)

1 tsp pure vanilla extract

1/2 cup dark chocolate chips (or chopped dark chocolate)

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Prepare the Zucchini: Grate the zucchini using a box grater. If it seems watery, gently squeeze it in a clean kitchen towel to remove excess moisture.

      Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, cocoa powder, rolled oats, baking soda, baking powder, and sea salt until combined.

        Combine Wet Ingredients: In a separate bowl, mix the honey (or maple syrup), eggs, applesauce, almond milk, and vanilla extract. Whisk until smooth.

          Combine Everything: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated zucchini and dark chocolate chips (and nuts if using) until evenly distributed.

            Fill Muffin Tin: Divide the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
