1/2 cup raw almonds

1/4 cup unsweetened cocoa powder

1/4 cup almond butter (or any nut butter of your choice)

1 tsp vanilla extract

A pinch of sea salt

1/4 cup shredded unsweetened coconut (optional)

1/4 cup dark chocolate chips (optional, for drizzling)

Instructions
 

Prepare the Dates: Start by soaking the pitted Medjool dates in warm water for about 10 minutes to soften them. Drain and set aside.

    Process the Almonds: In a food processor, add the raw almonds and pulse until they are finely chopped, resembling almond meal. Be careful not to over-process; you want to maintain some texture.

      Combine Ingredients: Add the soaked dates, cocoa powder, almond butter, vanilla extract, and a pinch of sea salt into the food processor with the chopped almonds. Blend until the mixture starts to stick together and forms a dough-like consistency. You may need to scrape down the sides a few times to make sure everything is well incorporated.

        Shape the Bites: Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into small balls. Place them on a parchment-lined baking sheet. You can also flatten them slightly for a different shape, if desired.
