Healthy Chicken Cabbage Stir-Fry

Ingredients
  

1 lb boneless, skinless chicken breasts, sliced thinly

4 cups green cabbage, shredded

1 red bell pepper, sliced

1 cup carrots, julienned

3 cloves garlic, minced

1 inch piece fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon rice vinegar

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Ingredients: Wash and chop all vegetables and the chicken. Make sure everything is ready to go, as stir-frying is a fast process.

    Marinate the Chicken: In a bowl, combine the sliced chicken with soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, and a sprinkle of salt and pepper. Let it marinate for about 10-15 minutes.

      Heat the Oil: In a large wok or frying pan, heat the olive oil over medium-high heat.

        Cook the Chicken: Add the marinated chicken to the pan in a single layer. Cook for about 4-5 minutes, or until the chicken is browned and cooked through. Remove from the pan and set aside.

          Sauté the Vegetables: In the same pan, add the shredded cabbage, red bell pepper, and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.

            Combine Everything: Return the cooked chicken to the pan with the vegetables. Sprinkle in the red pepper flakes (if using) and toss everything together so it’s evenly coated. Cook for an additional 1-2 minutes to heat through.
