6 large eggs

1 cup fresh spinach, chopped

½ cup feta cheese, crumbled

½ bell pepper (red or yellow), diced

¼ cup onion, finely chopped

¼ cup milk (or a non-dairy alternative)

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray or olive oil for greasing

Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.

    Whisk the eggs: In a large mixing bowl, crack the 6 large eggs and whisk them together until well beaten.

      Mix in dairy: Add in the milk, garlic powder, salt, and black pepper. Whisk again until combined.

        Add vegetables and cheese: Fold in the chopped spinach, diced bell pepper, onion, and crumbled feta cheese. Make sure everything is evenly distributed in the egg mixture.

          Pour into muffin tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
