Hawaiian BBQ Chicken and Pineapple Foil Packets

2 boneless, skinless chicken breasts

1 cup BBQ sauce (preferably Hawaiian style)

1 cup fresh pineapple chunks (or canned)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, sliced

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Aluminum foil

Instructions
 

Prep the Foil: Cut 4 large pieces of aluminum foil (about 12 inches each). Lay them flat on a clean surface.

    Marinate the Chicken: In a bowl, mix together the BBQ sauce, soy sauce, honey, garlic powder, and ground ginger. Add salt and pepper to taste. Slice the chicken breasts into bite-sized pieces and coat them with the marinade. Let it sit for about 15-20 minutes for extra flavor.

      Assemble the Packets: On each piece of foil, place a portion of the marinated chicken in the center. Top with equal amounts of pineapple chunks, sliced red and green bell peppers, and red onion.

        Seal the Packets: Fold the sides of the foil over the chicken and vegetables, then fold the top and bottom edges to completely seal the packets. Make sure they are tightly closed to avoid any leakage.

          Cook: Preheat your grill to medium heat (about 350°F/175°C). Place the foil packets on the grill, close the lid, and cook for 20-25 minutes. Alternatively, you can bake them in a preheated oven at 400°F (200°C) for the same duration.

            Check for Doneness: Carefully open one packet to check if the chicken is cooked through (should reach an internal temperature of 165°F/74°C) and the vegetables are tender.

              Serve: Once done, carefully remove the packets from the grill or oven (they will be hot!). Let cool for a minute, then open the packets, garnish with fresh chopped cilantro, and serve directly from the foil or on rice.
