3 ripe bananas, mashed

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup crushed pineapple (drained)

1/2 cup shredded coconut

1/2 teaspoon ground cinnamon

1/4 cup chopped macadamia nuts (optional)

1/4 cup dark chocolate chips (optional for a twist)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or cooking spray.

    In a large mixing bowl, combine the mashed bananas and melted butter, stirring until well blended.

      Add the granulated sugar, eggs, and vanilla extract to the banana mixture. Mix until fully incorporated.

        In a separate bowl, whisk together the baking soda, salt, flour, and ground cinnamon.

          Gradually add the dry ingredients to the wet mixture, stirring just until the flour is absorbed. Do not overmix.

            Fold in the crushed pineapple, shredded coconut, and any optional add-ins (macadamia nuts or dark chocolate chips) until evenly distributed.

              Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

                  Once done, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
