Ingredients

2 cups pureed pumpkin (canned or fresh roasted)

2-3 Hatch green chilies, roasted, peeled, and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup coconut milk (or heavy cream)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon lime juice (freshly squeezed)

Fresh cilantro, for garnish

Pumpkin seeds, for garnish

Instructions

Prepare the Chilies: If using fresh Hatch chilies, roast them over an open flame until the skin is charred. Place them in a sealed plastic bag for about 10 minutes, then peel the skin and remove the seeds. Dice the chilies and set aside.

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5-7 minutes, or until translucent. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Spices: Mix in the diced Hatch chilies, cumin, and smoked paprika into the pot. Cook for another minute to release the spices' flavors.

Combine Ingredients: Pour in the pureed pumpkin, vegetable or chicken broth, and coconut milk. Stir well to combine all ingredients and bring the mixture to a gentle simmer.

Simmer the Soup: Reduce the heat to low and let the soup simmer for about 20-25 minutes, stirring occasionally. This allows the flavors to meld beautifully.

Blend for Creaminess: If you prefer a smoother texture, use an immersion blender to puree the soup directly in the pot until creamy. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.

Season to Taste: Add salt and freshly cracked black pepper to taste. Stir in the lime juice for a touch of brightness.

Serve and Garnish: Ladle the soup into bowls, garnish with fresh cilantro and a sprinkle of pumpkin seeds for crunch.

Enjoy! Serve warm with crusty bread or tortilla chips for dipping.
