Hatch Chili Chicken Queso Bake

2 cups cooked chicken, shredded

1 cup Hatch green chiles, roasted and diced (frozen or fresh)

1 cup corn kernels (frozen or fresh)

1 cup black beans, rinsed and drained

2 cups cream cheese, softened

1 cup sour cream

1 ½ cups shredded cheddar cheese (divided)

1 ½ cups shredded Monterey Jack cheese (divided)

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

½ tsp paprika

½ tsp salt

¼ tsp black pepper

1 cup tortilla chips, crushed (for topping)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional for garnish)

Instructions
 

Preheat oven to 350°F (175°C).

    In a large mixing bowl, combine the softened cream cheese and sour cream until well blended and creamy.

      Stir in the shredded chicken, diced Hatch green chiles, corn, black beans, 1 cup of shredded cheddar cheese, and 1 cup of shredded Monterey Jack cheese.

        Add the garlic powder, onion powder, cumin, paprika, salt, and black pepper to the mixture. Stir until all ingredients are evenly combined.

          Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Top the mixture with the remaining ½ cup of cheddar cheese and ½ cup of Monterey Jack cheese.

              Sprinkle the crushed tortilla chips over the cheese layer evenly.

                Bake in the preheated oven for about 25-30 minutes, or until the queso bake is hot and bubbly, and the cheese is melted and slightly golden on top.

                  Once baked, remove from the oven and let it cool for a few minutes.

                    Garnish with fresh chopped cilantro and sliced jalapeños if desired, before serving.
