Ingredients

2 cups frozen hashbrowns (thawed)

2 cups cooked chicken, shredded or diced

1 cup shredded cheddar cheese

1 cup cream of chicken soup (or homemade)

½ cup sour cream

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen mixed vegetables (carrots, peas, corn; optional)

¼ cup green onions, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

Prepare the Casserole Mixture: In a large mixing bowl, combine the thawed hashbrowns, shredded chicken, half of the cheddar cheese, cream of chicken soup, sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper. If you are adding mixed vegetables, fold them into the mixture as well.

Mix Well: Stir everything together thoroughly until well combined. The mixture should be creamy and evenly distributed.

Transfer to Baking Dish: Lightly grease a 9x13 inch casserole dish. Pour the hashbrown and chicken mixture into the dish, spreading it out evenly.

Add Cheese Topping: In a small bowl, sprinkle the remaining cheddar cheese over the top of the casserole.

Bake: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and bubbly.

Serve: Once baked, remove the casserole from the oven and allow it to cool for a few minutes. Garnish with chopped green onions before serving.

Enjoy: Serve warm and enjoy this hearty and comforting dish!
