Harvest Chicken Salad with Cranberries

2 cups cooked chicken breast, shredded or diced

1 cup fresh spinach, chopped

1 cup arugula, roughly torn

1/2 cup dried cranberries

1/2 cup pecans, toasted and roughly chopped

1/2 cup diced apple (Fuji or Honeycrisp is best)

1/3 cup crumbled feta cheese

1/3 cup red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Instructions
 

Prepare the Dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth. Adjust seasoning to your taste. Set aside.

    Combine the Greens: In a large salad bowl, combine the chopped spinach and arugula.

      Add the Main Ingredients: Add the cooked chicken, dried cranberries, diced apple, toasted pecans, crumbled feta, sliced red onion, and chopped parsley to the bowl with the greens.
