Harissa Spiced Roasted Chickpeas – Crispy & Addictive!

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

2 tablespoons harissa paste (adjust based on spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/4 teaspoon sea salt (to taste)

1/4 teaspoon black pepper

Zest of 1 lemon (optional, for added freshness)

Fresh herbs (like parsley or cilantro) for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: After rinsing the chickpeas, thoroughly pat them dry using a clean kitchen towel or paper towels. This step is crucial for achieving maximum crispiness.

      Seasoning Mix: In a large bowl, combine olive oil, harissa paste, garlic powder, onion powder, smoked paprika, ground cumin, sea salt, and black pepper. If you’re using lemon zest, add it in as well.

        Coat Chickpeas: Add the dried chickpeas to the bowl and toss them well in the harissa mixture until they are evenly coated.

          Arrange on Baking Sheet: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded for optimal roasting.

            Roast: Place the baking sheet in the preheated oven and roast the chickpeas for about 20-30 minutes. Stir them halfway through to ensure they roast evenly. They should be golden brown and crispy when done.

              Cool and Serve: Once roasted, remove the chickpeas from the oven and let them cool slightly. They will continue to crisp up as they cool.

                Garnish: If desired, toss with fresh herbs before serving or simply enjoy as is.

                  Storage: Store any leftovers in an airtight container at room temperature for up to 5 days.
