Hamburger Supreme Casserole

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 can (8 oz) tomato sauce

1 cup corn (fresh, frozen, or canned)

1 cup black beans, drained and rinsed

1 cup cooked rice (white or brown)

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup crushed tortilla chips (plus extra for topping)

1/4 cup fresh cilantro, chopped (optional for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef. Add the diced onion and minced garlic, cooking until the onion is translucent and the beef is thoroughly cooked. Drain any excess fat.

      Combine Ingredients: In the skillet with the beef, stir in the drained diced tomatoes, tomato sauce, corn, black beans, cooked rice, chili powder, cumin, paprika, and salt and pepper. Cook for about 5 minutes until heated through.

        Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the beef mixture evenly across the bottom. Sprinkle half of the shredded cheddar cheese, followed by a layer of crushed tortilla chips. Repeat with the remaining beef mixture, then top with the remaining cheddar cheese and extra tortilla chips for a crunchy topping.

          Bake the Casserole: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Remove the casserole from the oven, let it sit for a few minutes, then garnish with fresh cilantro (if using). Serve hot with a dollop of sour cream on the side.
