500g chicken breast, diced

500g sweet potatoes, peeled and cubed

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

200ml coconut milk

150g shredded cheese (cheddar or mozzarella)

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Oven: Preheat the oven to 200°C (390°F).

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent, about 3-5 minutes.

      Cook the Chicken: Add the diced chicken breast to the skillet. Season with salt, pepper, smoked paprika, and cumin. Cook for about 7-10 minutes until the chicken is cooked through. Stir occasionally to ensure even cooking.

        Add Vegetables: Stir in the red bell pepper and sweet potatoes into the skillet, cooking for another 5 minutes until the sweet potatoes start to soften.

          Mix with Coconut Milk: Pour in the coconut milk, mixing well to combine all ingredients. Allow the mixture to simmer for about 10 minutes until the sweet potatoes are tender.

            Layer the Casserole: Transfer the chicken and sweet potato mixture into a greased baking dish. Top with shredded cheese evenly across the surface.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is golden and bubbly.

                Serve: Once baked, remove the casserole from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
