Ingredients
  

For the Meatballs:

1 lb ground beef (or lamb)

1/2 cup breadcrumbs

1/4 cup finely chopped onion

2 garlic cloves, minced

1/4 cup chopped fresh parsley

1 tsp dried oregano

1 tsp ground cumin

1/2 tsp salt

1/2 tsp black pepper

1 egg, beaten

2 tbsp olive oil (for cooking)

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and excess water squeezed out

1 garlic clove, minced

1 tbsp olive oil

1 tbsp lemon juice

1 tbsp fresh dill (or 1 tsp dried dill)

Salt and pepper to taste

For the Lemon Rice:

1 cup long-grain rice

2 cups vegetable or chicken broth

1 tbsp olive oil

Juice and zest of 1 lemon

1/4 cup chopped fresh parsley (for garnish)

Salt to taste

For the Cucumber Salad:

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

2 tbsp olive oil

1 tbsp red wine vinegar

Salt and pepper to taste

1/4 cup feta cheese (optional)

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, parsley, oregano, cumin, salt, black pepper, and beaten egg. Mix until well combined.

      - Shape the mixture into meatballs (about 1 inch in diameter).

        - Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned and cooked through, about 10-12 minutes. Set aside.

          Make the Tzatziki Sauce:

            - In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and dill. Mix well and season with salt and pepper to taste. Refrigerate until serving.

              Cook the Lemon Rice:

                - In a medium saucepan, heat olive oil over medium heat. Add rice and toast for about 2 minutes.

                  - Add broth, lemon juice, zest, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed. Fluff with a fork and stir in parsley.

                    Prepare the Cucumber Salad:

                      - In a mixing bowl, combine diced cucumber, cherry tomatoes, and red onion. Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss to combine and sprinkle feta cheese on top if desired.

                        Assemble the Gyro Bowls:

                          - In serving bowls, layer the lemon rice first, followed by meatballs. Top with tzatziki sauce and a generous helping of cucumber salad. Garnish with additional parsley or feta cheese if desired.
