Guy’s Famous Beef Enchiladas

1 lb ground beef (80/20 blend)

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

2 cups shredded sharp cheddar cheese

1 cup sour cream

1 cup enchilada sauce (homemade or store-bought)

8 large flour tortillas

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, for garnish

Sliced jalapeños, for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart as it cooks. Drain excess fat.

      Add Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion becomes translucent.

        Mix Ingredients: Stir in the black beans, diced tomatoes with green chilies, corn, cumin, chili powder, salt, and pepper. Cook for another 5 minutes until well combined and heated through.

          Assemble Enchiladas: In a large baking dish, pour a thin layer of enchilada sauce on the bottom. Working with one tortilla at a time, spoon about 1/4 cup of the beef mixture in the center of each tortilla. Top with a sprinkle of cheese, then roll it up tightly. Place seam-side down in the baking dish. Repeat with all tortillas.

            Finish with Sauce and Cheese: Once all tortillas are in the baking dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining shredded cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Serve: Remove from the oven and let it cool for a few minutes. Drizzle with sour cream, garnish with fresh cilantro, and add sliced jalapeños if desired.
