8 oz elbow macaroni

2 cups sharp Irish cheddar cheese, shredded

1 cup Gruyère cheese, shredded

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup Guinness stout

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup panko breadcrumbs

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni until al dente according to package directions. Drain and set aside.

    Prepare the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes, stirring continuously until it's a light golden color.

      Add the Liquids: Gradually whisk in the milk and Guinness stout, ensuring there are no lumps. Continue to whisk until the mixture thickens and starts to bubble (about 5 minutes).

        Season the Sauce: Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well, then reduce heat to low.

          Incorporate the Cheese: Remove the saucepan from heat and gradually add the shredded Irish cheddar and Gruyère, stirring constantly until completely melted and smooth.

            Combine Pasta and Cheese Sauce: Add the cooked macaroni to the cheese sauce, stirring to ensure all pasta is well coated.

              Prepare Topping: In a small bowl, mix the panko breadcrumbs with a tablespoon of melted butter, salt, and pepper.
