Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/3 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional)

1/4 cup walnuts or pecans, chopped (optional)

2 tablespoons flaxseed meal (optional for added nutrition)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

Add the Dry Ingredients: Stir in the rolled oats, cinnamon, salt, and flaxseed meal (if using). Mix until all the ingredients are well incorporated. The mixture should be thick and sticky.

Incorporate Add-Ins: Fold in the dark chocolate chips and chopped nuts if you’re using them, ensuring even distribution throughout the mixture.

Shape the Bites: Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls. Place them on a lined baking sheet or plate.

Chill and Set: Once all the mixture is shaped, cover the energy bites with plastic wrap or a lid. Place them in the refrigerator for at least 30 minutes to firm up.

Enjoy or Store: After chilling, enjoy right away or transfer the energy bites into an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer storage.
