Grilled Veggie & Mozzarella Sandwiches

Ingredients
  

1 large zucchini, sliced into 1/4-inch rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 small eggplant, sliced into 1/4-inch rounds

8 oz fresh mozzarella, sliced

4 ciabatta rolls (or your favorite bread)

2 tbsp olive oil

2 cloves garlic, minced

1 tsp dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Balsamic glaze, for drizzling (optional)

Instructions
 

Marinate the Veggies: In a large bowl, combine the zucchini, red and yellow bell peppers, and eggplant. Add olive oil, minced garlic, oregano, salt, and pepper. Toss well to coat the vegetables evenly and let them marinate for at least 20 minutes.

    Preheat the Grill: Heat your grill or grill pan over medium-high heat. Ensure it’s well-preheated to create nice grill marks and prevent sticking.

      Grill the Vegetables: Once the grill is ready, place the marinated vegetables on the grill. Cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.

        Assemble the Sandwiches: Slice the ciabatta rolls in half. Place a few pieces of grilled vegetables on the bottom half of each roll. Add slices of fresh mozzarella on top of the veggies.

          Grill the Sandwiches: Close the sandwiches and brush the outside of the rolls with a bit more olive oil. Place them on the grill for 3-4 minutes on each side, or until the bread is crispy and the cheese is melted.

            Serve: Remove from the grill and let cool for a minute. Optionally, garnish with fresh basil leaves and drizzle with balsamic glaze for an extra burst of flavor.
