4 ripe peaches, halved and pitted

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon ground black pepper

1 teaspoon fresh rosemary, finely chopped (optional)

1/4 cup balsamic vinegar

2 tablespoons honey

Vanilla ice cream (for serving)

Mint leaves (for garnish)

Instructions
 

Prepare the Peaches: Preheat your grill to medium heat. In a mixing bowl, toss the peach halves with olive oil, sea salt, black pepper, and chopped rosemary if using. Ensure the peaches are well coated.

    Make the Drizzle: In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat, allowing it to reduce for about 5-7 minutes, until it thickens slightly. Remove from heat and let it cool.

      Grill the Peaches: Place the peaches cut-side down on the grill. Grill for approximately 4-5 minutes, or until you see nice grill marks and the peaches are slightly softened. Flip them over and grill for an additional 3-4 minutes.

        Serve: Remove the peaches from the grill and place them on a serving platter. Drizzle the honey-balsamic mixture over the grilled peaches.
