Ingredients

4 slices of thick sourdough bread

1 cup cream cheese, softened

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup mixed fresh fruits (strawberries, peaches, blueberries, and bananas), sliced

½ teaspoon cinnamon

¼ cup granola (optional, for crunch)

2 tablespoons butter (or coconut oil for a vegan option)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Cream Cheese Mixture: In a medium bowl, combine the softened cream cheese, honey, and vanilla extract. Stir until smooth and well combined. Set aside.

Preheat the Grill or Pan: Heat your grill or a non-stick skillet over medium heat.

Assemble the Sandwiches: Spread a generous layer of the cream cheese mixture on two slices of sourdough bread. Top with the mixed fresh fruits, evenly distributing them. Sprinkle a bit of cinnamon over the fruits for added flavor.

Add the Crunch (optional): If you're using granola, sprinkle it on top of the fruits for a delightful crunch.

Close the Sandwiches: Place the other two slices of sourdough bread on top to create two sandwiches.

Grill the Sandwiches: Melt butter (or coconut oil) in the preheated skillet or on the grill. Place the sandwiches on the grill/pan and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cream cheese mixture is warm.

Serve: Once grilled, remove the sandwiches from the heat and let them cool for a minute. Cut them in half diagonally, garnish with fresh mint leaves if desired, and serve immediately.
