Grilled Eggplant & Tomato Stacks

Ingredients
  

2 medium eggplants, sliced into ¼-inch rounds

4 ripe tomatoes, sliced into ¼-inch rounds

1 cup fresh mozzarella cheese, sliced

½ cup fresh basil leaves

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

Optional: ¼ teaspoon red pepper flakes for a kick

Instructions
 

Prepare the Eggplants: Begin by sprinkling salt on both sides of the eggplant slices and let them sit for about 20 minutes. This will help draw out moisture and bitterness. After 20 minutes, rinse the eggplant slices under cold water and pat dry with paper towels.

    Marinate: In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper. If you prefer a hint of spice, add the red pepper flakes too. Place the eggplant rounds in a shallow dish and pour the marinade over them. Allow the eggplant to marinate for at least 15 minutes.

      Grill the Eggplants: Preheat your grill to medium-high heat. Once hot, place the marinated eggplants on the grill. Grill each side for about 5-7 minutes, until the eggplants are tender and have nice grill marks. Remove from the grill and set aside.

        Assemble the Stacks: On a serving platter, start stacking the grilled eggplant. Layer one slice of eggplant, followed by a slice of tomato, a slice of mozzarella cheese, and a basil leaf. Repeat the layers until you have 3-4 levels, ending with a final slice of tomato on top.

          Finish with Drizzle: Drizzle any remaining marinade over the stacked towers, and sprinkle with additional salt and pepper if desired.

            Serve: Garnish with extra fresh basil leaves around the platter for a beautiful presentation. Serve warm or at room temperature.
