4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 jalapeño, seeded and minced (optional for spice)

Salt and pepper, to taste

8 small corn or flour tortillas

Olive oil, for grilling

Crumbled feta or cotija cheese, for garnish (optional)

Prepare the Grill: Preheat your grill to medium-high heat. Lightly brush the corn with olive oil and season with salt and pepper.

    Grill the Corn: Place the corn directly on the grill grates. Grill for about 10-15 minutes, turning occasionally, until the corn is charred and tender. Remove from the grill and allow to cool slightly.

      Cut the Corn Kernels: Once the corn is cool enough to handle, use a sharp knife to slice the kernels off the cob into a large mixing bowl.

        Mix the Salsa Ingredients: To the bowl of corn, add the diced avocados, red onion, cherry tomatoes, minced jalapeño (if using), and chopped cilantro. Squeeze the lime juice over the mixture and gently toss everything together. Season with salt and pepper to taste.

          Warm the Tortillas: On the grill or in a skillet, warm the tortillas until they are pliable and slightly charred.

            Assemble the Tacos: Fill each tortilla with a generous scoop of the grilled corn and avocado salsa.
