Grilled Chicken with Peach BBQ Glaze

4 boneless, skinless chicken breasts

2 cups fresh peaches, pitted and quartered

1 cup ketchup

1/4 cup apple cider vinegar

1/4 cup honey

2 tablespoons Dijon mustard

1 tablespoon soy sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

Salt to taste

Fresh cilantro or parsley for garnish (optional)

Make the Peach BBQ Glaze: In a medium saucepan over medium heat, combine the quartered peaches, ketchup, apple cider vinegar, honey, Dijon mustard, soy sauce, smoked paprika, garlic powder, onion powder, black pepper, and a pinch of salt. Bring to a simmer, then reduce the heat to low and cook for about 15-20 minutes, stirring occasionally, until the peaches are softened.

    Blend the Sauce: Once the mixture is cooked, use an immersion blender (or regular blender) to puree the sauce until smooth. Return the glaze to the saucepan and simmer for an additional 5 minutes to thicken. Remove from heat and set aside.

      Prepare the Chicken: While the glaze cools, preheat your grill to medium-high heat. Season the chicken breasts with salt, black pepper, and a drizzle of olive oil. Make sure the chicken is evenly coated.

        Grill the Chicken: Place the chicken breasts on the preheated grill. Grill for about 6-7 minutes on one side without moving them, allowing for beautiful grill marks. Flip the chicken and brush generous amounts of the peach BBQ glaze on top. Grill for another 6-7 minutes, basting with the glaze once more while cooking, until the internal temperature reaches 165°F (75°C).
