For the Chicken Skewers:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh lime juice from 1 lime

6-8 skewers (if using wooden skewers, soak in water for 30 minutes)

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 small jalapeño, seeded and minced (optional for spice)

1/4 cup cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, soy sauce, honey, minced garlic, cumin, smoked paprika, salt, black pepper, and lime juice. Whisk together until well blended.

      - Add the cubed chicken to the marinade. Mix well to ensure all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

        Prepare the Mango Salsa:

          - In a separate bowl, combine diced mango, red bell pepper, red onion, jalapeño (if using), and chopped cilantro.

            - Squeeze the lime juice over the salsa mixture and add salt and pepper to taste. Stir gently to combine. Allow the salsa to sit, letting the flavors meld together while the chicken marinates.

              Skewer the Chicken:

                - Preheat your grill to medium-high heat.

                  - Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

                    Grill the Chicken:

                      - Once the grill is hot, place the chicken skewers on the grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                        Serve:
