Grilled Chicken Pineapple Quesadillas

2 cups cooked chicken breast, shredded

1 cup fresh pineapple, diced

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

½ teaspoon cumin

Salt and pepper, to taste

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Pineapple: In a skillet over medium heat, add the diced pineapple. Sauté for about 2-3 minutes until softened and caramelized. Remove from heat and set aside.

    Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken with olive oil, garlic powder, chili powder, cumin, salt, and pepper. Mix well to ensure the spices coat the chicken evenly.

      Combine Ingredients: Add the sautéed pineapple and both types of cheese (Monterey Jack and cheddar) to the chicken mixture. Stir until all ingredients are well combined.

        Assemble Quesadillas: Heat a large skillet or griddle over medium heat. Place one flour tortilla on the skillet, then spread about 1 cup of the chicken-pineapple mixture evenly over half of the tortilla. Fold the tortilla in half.

          Grill the Quesadilla: Cook the folded quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. You can press down lightly with a spatula for even grilling. Repeat this step for the remaining tortillas and filling.

            Slice and Serve: Remove the quesadillas from the skillet, let them cool for a minute, then cut them into wedges. Garnish with fresh cilantro and serve with lime wedges on the side for a zesty touch.
