Grilled Chicken & Peach Kabobs

Ingredients
  

1 lb boneless, skinless chicken breasts (cut into 1-inch cubes)

2 ripe peaches (pitted and cut into wedges)

1 red bell pepper (cut into 1-inch pieces)

1 medium red onion (cut into wedges)

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon dried thyme

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, honey, thyme, garlic powder, smoked paprika, salt, and pepper. Add the chicken cubes and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

    Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

      Assemble the Kabobs: Thread the marinated chicken, peach wedges, red bell pepper pieces, and red onion wedges onto the soaked skewers, alternating between the ingredients. Leave a small space between each piece to ensure even cooking.

        Grill the Kabobs: Place the assembled kabobs on the grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the peaches start to caramelize.

          Serve: Remove the kabobs from the grill and let them rest for a couple of minutes. Serve warm with a drizzle of additional honey or a squeeze of fresh lemon juice if desired.
