8 oz (about 2 cups) rotini or fusilli pasta

1 lb boneless, skinless chicken breasts

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper, to taste

2 tbsp olive oil, plus more for grilling

4 cups romaine lettuce, chopped

½ cup cherry tomatoes, halved

½ cup grated Parmesan cheese

½ cup Caesar dressing

Croutons (store-bought or homemade) for topping

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta is cooking, pat the chicken breasts dry with paper towels. Season both sides with garlic powder, Italian seasoning, salt, and pepper.

      Grill the Chicken: Heat a grill or grill pan over medium-high heat and add a drizzle of olive oil. Once hot, place the seasoned chicken breasts on the grill. Cook for about 6-8 minutes per side or until the internal temperature reaches 165°F (75°C) and juices run clear. Remove from the grill and let rest for 5 minutes before slicing into bite-sized pieces.
