4 slices of sourdough bread

1 cup fresh mozzarella cheese, sliced

½ cup roasted red peppers, sliced

1 cup fresh spinach leaves

¼ cup balsamic vinaigrette

1 tablespoon olive oil

½ teaspoon garlic powder

½ teaspoon Italian seasoning

Salt and pepper, to taste

Prep the Bread: Preheat a grill pan or skillet over medium heat. Brush one side of each slice of sourdough bread with olive oil.

    Layer the Ingredients: On the unbrushed side of two slices of bread, layer the fresh mozzarella cheese, roasted red peppers, and spinach leaves. Drizzle balsamic vinaigrette over the layers, and sprinkle with garlic powder, Italian seasoning, salt, and pepper.

      Assemble the Sandwich: Place the other two slices of bread on top, oiled side up, to create your sandwiches.

        Grill the Sandwiches: Place the sandwiches in the preheated grill pan. Grill for about 4-5 minutes on each side or until the bread is golden brown and crispy, and the cheese has melted. You can cover the skillet with a lid to help the cheese melt more evenly.
