8 ounces penne pasta

2 cups cooked chicken, shredded

1 can (10 oz) diced green chilies

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup fresh cilantro, chopped (for garnish)

1/2 cup breadcrumbs (optional, for topping)

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Mix the Sauce: In a large mixing bowl, combine the shredded chicken, diced green chilies, sour cream, cream cheese, half of the cheddar cheese, half of the Monterey Jack cheese, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Stir until well blended.

        Combine Pasta and Sauce: Add the cooked pasta to the chicken mixture and stir until the pasta is evenly coated with the sauce.

          Assemble the Bake: Transfer the pasta mixture to a greased 9x13 inch baking dish. Spread it out evenly. Sprinkle the remaining cheddar and Monterey Jack cheeses on top. If using, sprinkle the breadcrumbs evenly over the cheese layer. Drizzle a little olive oil over the top to help with browning.
