Ingredients
  

1 lb fresh green beans, trimmed and cut into 2-inch pieces

1 cup sliced mushrooms (button or cremini)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 cup shredded sharp cheddar cheese

1 cup crispy fried onions (plus extra for topping)

2 tablespoons olive oil

1 teaspoon soy sauce

1 teaspoon dried thyme

Salt and pepper to taste

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large pot of boiling salted water, blanch the green beans for about 4-5 minutes until bright green and slightly tender. Drain and transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

      In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the mushrooms and cook for another 5 minutes until they have released their moisture. Stir in the garlic and sauté for an additional minute.

        In a mixing bowl, combine the heavy cream, vegetable broth, soy sauce, dried thyme, salt, and pepper. Whisk until well combined.

          In a large casserole dish, combine the blanched green beans, sautéed onion and mushroom mixture, and the cream mixture. Stir until everything is evenly coated. Fold in 1 cup of shredded cheddar cheese until well distributed.

            Bake in the preheated oven for 25 minutes. After 25 minutes, remove from the oven and stir the casserole. Top with the remaining shredded cheddar cheese and crispy fried onions.

              Return to the oven and bake for an additional 10-15 minutes, or until the casserole is bubbly and the top is golden brown.

                Remove from the oven, let it cool slightly, and serve warm.
