Ingredients
  

2 cups rotini or penne pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, chopped red onion, sliced Kalamata olives, and chopped parsley.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper until well combined.

        Combine Pasta and Vegetables: Once the pasta has cooled, add it to the mixing bowl with the vegetables. Pour the dressing over the pasta and toss to combine thoroughly.

          Add Feta Cheese: Gently fold in the crumbled feta cheese, being careful not to break it up too much.

            Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Toss again before serving.
