For the Greek Chicken:

4 boneless, skinless chicken breasts

3 tablespoons olive oil

Juice of 1 lemon

Zest of 1 lemon

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Juice of ½ lemon

Salt and pepper to taste

For the Couscous:

1 cup couscous

1 ¼ cups vegetable or chicken broth

1 tablespoon olive oil

1 teaspoon lemon zest

½ teaspoon salt

Fresh parsley for garnish (optional)

Marinate the Chicken: In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, black pepper, and paprika. Add the chicken breasts, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Tzatziki Sauce: In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, and lemon juice. Season with salt and pepper to taste. Mix well and adjust seasoning if needed. Cover and refrigerate to allow flavors to meld.

      Cook the Couscous: In a saucepan, bring the broth to a boil. Stir in the couscous, olive oil, lemon zest, and salt. Remove from heat, cover tightly, and let it sit for about 5 minutes until the couscous absorbs the liquid. Fluff with a fork and set aside.

        Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F or 75°C). Let rest for a few minutes before slicing.
