Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine ground chicken, breadcrumbs, parsley, mint, feta cheese, chopped onion, minced garlic, egg, oregano, salt, and black pepper.

      - Mix everything together until just combined, being careful not to overwork the mixture.

        - Shape the mixture into meatballs, about 1 inch in diameter.

          Cook the Meatballs:

            - Heat a large skillet over medium heat and add a drizzle of olive oil.

              - Once the oil is hot, add the meatballs in batches. Cook for 5-7 minutes on each side until they are golden brown and cooked through, reaching an internal temperature of 165°F. Transfer cooked meatballs to a plate and cover with foil to keep warm.

                Prepare the Lemon Orzo:

                  - In a medium saucepan, bring the chicken broth or water to a boil. Add the orzo and cook according to package instructions, usually about 8-10 minutes until al dente.

                    - Once cooked, drain any excess liquid, if necessary, and stir in olive oil, lemon juice, zest, salt, and pepper to taste. Mix until well combined.

                      Assemble the Dish:

                        - On a serving platter, spoon the lemon orzo and arrange the Greek chicken meatballs on top.

                          - Garnish with freshly chopped dill and additional lemon zest if desired.

                            Serve & Enjoy:

                              - Serve the dish warm, ideal for a delightful family dinner or gathering!
