Golden Maple Pecan Granola

3 cups rolled oats

1 cup pecan halves, roughly chopped

1/2 cup sunflower seeds

1/2 cup shredded coconut (unsweetened)

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup dried cranberries or raisins (for added sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy clean-up.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pecans, sunflower seeds, shredded coconut, cinnamon, and sea salt. Stir until everything is evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well blended.

        Mix Together: Pour the wet mixture over the dry ingredients and stir until all the dry ingredients are thoroughly coated with the wet ingredients.

          Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet, spreading it out into an even layer.

            Bake: Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even browning. Keep an eye on it to prevent burning; you're looking for a golden brown color.
