Ingredients

1 cup fresh broccoli florets, chopped

1 cup shredded sharp cheddar cheese

6 large eggs

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt (or to taste)

1/2 cup diced cooked ham or turkey (optional)

1/4 cup chopped green onions (for garnish)

Olive oil spray (for greasing)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil spray to prevent sticking.

Prepare the Broccoli: Bring a small pot of water to a boil. Add the chopped broccoli and blanch for 2 minutes, then drain and immediately transfer it to ice water to stop the cooking process. Once cooled, drain again and set aside.

Mix the Egg Base: In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the garlic powder, onion powder, black pepper, and salt.

Incorporate Add-ins: Gently fold in the blanched broccoli, shredded cheddar cheese, and diced ham or turkey if using. Make sure all the ingredients are evenly distributed.

Fill the Muffin Tin: Pour the egg mixture evenly into the greased muffin cups, filling each about 3/4 full to leave room for rising.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the cups are puffed up and set in the middle. They should be golden brown on top.

Cool and Serve: Once done, remove the muffin tin from the oven and allow the cups to cool for a few minutes. Carefully run a knife around the edges and gently lift out each breakfast cup.

Garnish: Top with chopped green onions for a pop of color and extra flavor.

Enjoy: Serve warm as a delicious and nutritious breakfast or snack option. These cups can also be made ahead of time and reheated!
