German Potato Pancakes

4 medium-sized potatoes, peeled and grated

1 small onion, grated

2 large eggs

1/4 cup all-purpose flour

1 teaspoon baking powder

Salt and pepper, to taste

Vegetable oil, for frying

Applesauce, sour cream, or chives, for serving (optional)

Instructions
 

Place the grated potatoes in a clean kitchen towel. Squeeze out as much excess moisture as possible to ensure a crispy texture.

    In a large mixing bowl, combine the drained potatoes, grated onion, eggs, flour, baking powder, salt, and pepper. Mix until well incorporated.

      In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.

        Once the oil is hot, drop spoonfuls of the potato mixture into the skillet, flattening them gently with the back of the spoon to form pancakes about 1/2 inch thick.

          Fry the pancakes for 4-5 minutes on each side or until golden brown and crispy. Avoid overcrowding the pan; work in batches if necessary.

            Remove the pancakes and place them on a paper towel-lined plate to absorb excess oil.

              Serve hot with applesauce, sour cream, or sprinkle with chopped chives, if desired.
