Ingredients

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, finely chopped

1 large egg

¼ cup fresh parsley, chopped

2 tablespoons Worcestershire sauce

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

½ cup marinara sauce (for topping)

Olive oil spray (for greasing)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish or line it with parchment paper for easy cleanup.

Mix the Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped onion, egg, fresh parsley, Worcestershire sauce, oregano, salt, and black pepper. Mix until all ingredients are well incorporated, but avoid over-mixing to keep the meatloaf tender.

Shape the Meatloaves: Form the mixture into small, individual meatloaf shapes (about the size of a small fist). Place them in the prepared baking dish, spacing them evenly.

Add Marinara Sauce: Spoon the marinara sauce over the top of each meatloaf, ensuring they are nicely covered. This will add moisture and flavor during baking.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the meatloaves reach an internal temperature of 165°F (74°C) and are golden on top.

Cooling and Serving: Once cooked, remove the meatloaves from the oven and let them rest for about 5 minutes. Garnish with extra parsley and serve alongside your favorite sides, such as mashed potatoes or a fresh salad.
