2 medium zucchinis

½ cup grated Parmesan cheese

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 large eggs

Prep the Zucchini: Start by washing the zucchinis thoroughly. Slice them into thin rounds, about 1/8 inch thick. Ensure the slices are uniform for even cooking.

    Set Up Dredging Stations: In one bowl, whisk the eggs until well beaten. In another bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and black pepper.

      Dip the Zucchini Slices: Take each zucchini slice and dip it into the egg wash, making sure it’s fully coated. Allow any excess egg to drip off, then press each slice into the breadcrumb mixture until well coated on both sides.

        Prepare the Air Fryer: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray to prevent sticking.
