Garlic Lemon Roasted Veggie Bowls

2 cups of broccoli florets

1 red bell pepper, diced

1 medium zucchini, sliced into half-moons

1 medium yellow squash, sliced into half-moons

1 cup of cherry tomatoes, halved

1 large red onion, sliced

4 cloves of garlic, minced

1/4 cup of olive oil

Zest and juice of 1 large lemon

1 teaspoon of dried oregano

1 teaspoon of smoked paprika

Salt and pepper to taste

Fresh parsley, chopped, for garnish

1 cup of quinoa, cooked (for serving)

Optional: Feta cheese or avocado slices (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large mixing bowl, combine the broccoli, red bell pepper, zucchini, yellow squash, cherry tomatoes, and red onion.

      Make the Dressing: In a separate small bowl, whisk together the olive oil, minced garlic, lemon juice and zest, oregano, smoked paprika, salt, and pepper.

        Combine: Pour the dressing over the mixed veggies and toss to ensure everything is evenly coated.

          Roast the Veggies: Spread the vegetables in a single layer on a large baking sheet. Roast in the preheated oven for about 25-30 minutes or until the veggies are tender and slightly caramelized.

            Prepare the Quinoa: While the veggies are roasting, cook the quinoa according to package instructions. Typically, this involves rinsing the quinoa, then simmering it in two cups of water or vegetable broth for about 15 minutes.
