2 cups broccoli florets

2 cups cauliflower florets

2 cups carrots, sliced into bite-sized pieces

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 medium red onion, cut into wedges

4 cloves garlic, minced

1/4 cup olive oil

1 tablespoon dried oregano

1 tablespoon dried thyme

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C). This high temperature will help achieve that perfect roast.

      Prepare the Vegetables:

        In a large mixing bowl, combine the broccoli, cauliflower, carrots, red bell pepper, yellow bell pepper, and red onion. Ensure all vegetables are cut into similar-sized pieces for even cooking.
