1.5 lbs pork tenderloin

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 tablespoon olive oil

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

Juice of 1 lemon

Lemon slices, for garnish

Fresh herbs, for garnish

Prep the Marinade: In a medium bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, Dijon mustard, honey, salt, black pepper, red pepper flakes, and lemon juice. Whisk until well blended.

    Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it’s evenly coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Prepare the Baking Dish: Line a baking dish with aluminum foil for easier cleanup. You can also place a rack in the dish for optimal roasting.
